Veg stock generally is quite light compared to chicken, so you have to work harder to add some depth if you’re using it as a soup base.

I do season my soups quite heavily. I normally sample and add seasoning until I'm happy with it.

I'm tempted to take the rest of the week off on HIGHLY SPURIOUS GROUNDS just because my boss is insisting I go to some SOFTWARE TRAINING SESSION to use something I've ALREADY BEEN USING FOR THREE YEARS and PLAYED A LARGE PART IN DEVELOPING just so I can LISTEN to the SELF-APPOINTED OFFICE EXPERTS explain it to me PATRONIZINGLY

Honestly I thought that VIRTUALLY KILLING MYSELF over the last five years to get enough CASH to be able to tell the whole thing to CUNT OFF whenever I want would make me feel better but in some ways it's WORSE!

I'm a bit late to class but my routine at the moment is just bunging everything left in the fridge into the slow cooker and making a soup or stew. I have a lovely parsnip soup to look forward too after my walk.

I am more organised for tomorrow or Wednesday though - I've bought some saffron for a lovely risotto milanese.

I have nil interest in soup. A completely pointless affair for me.

I did make an amazing lamb casserole in the slow cooker a few weeks back though.

Yeah, but I'm being quite fussy. I'm trying to find a half done project or something done that I can tweak. Ideally a big van insulated, lined and electrics etc but I don't want a lot of interior. We cook/sit outside, I just want something to sleep in and transport our stuff, bikes, kayak etc. Put a roof tent on the top for Ron Jr and off we go. Thinking about spending 5 weeks on tour over the summer, ferry down to Spain then big road trip around Spain/Portugal, coming back to UK for last 2 weeks of August for our annual trip with mates and the bank holiday festival we work at.

But surprisingly, there arent a lot of vans on the market that match my exacting spec of half done, nice, and not 50 fucking grand.

That sounds amazing! That's what Mandy and I want to do.

Our friend has bought a VW T5 he's converting with the plan to sell next year so we're thinking of buying it. We have a VW T25 at the moment but it's just a bit too old.
